See the Parsley Salad recipe in the Recipes with Herbs Discussion under this Herb group. It's really, really good. I usually put the freshly cut herbs in a wide mouth cup half full of water ... like a flower arrangement and then a plastic bag big enought to cover it all and make like a little terrarium in the refrigerator. It will keep for about a week or until the leaves get slimy. If you rinse it, rinse with cool water and shake it gently and try to let it drip dry for a little while. I bought an Herb Keeper at Bed, Bath and Beyond that basically does the same thing but was too expensive and only holds a small box of herbs like from the grocery store.

You can dry the parsley and the oregano if you can't use it all. I had a gas stove and just spread it out and placed it over the pilot light if you don't have a dehydrator. Some people hang theirs to dry. Maybe someone else can tell you about freezing it. I've heard of freezing herbs in ice cube trays that you add a little water to.

Hi everyone, I just "harvested" my first "crop" of parsley today. A huge freezer bag of it! I haven't rinsed it for fear that will damage it in the refridge. Can someone help here? Can I rinse it and then how long will it stay in there? Can I freeze it or should I give it away to friends since I have more growing? Also the same with oregano? CAN SOMEONE HELP ME HERE!!!HA

I try to keep it clean when watering so it can air dry in the garden. Always try to pick in the morning ... before about 10:00 am. Don't use much fertilizer at all because you don't want lush green growth that has little essential oils and flavor. If I'm making tea anyway, I'll rinse lightly with cold water. Now my oregano has turned into a monster and is taking the garden over. The light freeze we had this year didn't even faze it. If I were drying it, I'd cut it before it in the morning and before it had blossommed and tie bunches loosely like with thread and hang in a dark room. But always use fresh herbs if you have them ... and use 2 to 3 times as much fresh as called for in recipes calling for dry herbs.

I use lemon balm with mint and camemile. it made a very nice tea. everyone enjoyed it at my bbq.

Lemon balm is different from lemon mint ... but you can make tea with the lemon mint or any kind of mint. I like the lemon and other citrus flavored herbs too. Try lemon verbena and lemon grass ... as well as the lemon balm. The lemon verbena gets all scraggly and will freeze back even here in Texas but then it also holds the lemon fragrance well when dried. You may need to put it in a pot and bring it in over the winter but it's always the first one to start growing again in the spring.

I'm new at herb gardening, clearing a new space for it. I have alot of lemon mint like plants. Is that lemon balm, they smell great. I wonder if you can make tea out of it. Think I'll try it today..............
